Prepares Students for: ServSafe® Food Safety Manager national exam, required to become a MN Certified Food Protection Manager
Target Student Population: ABE and ESL students, 5.0+ on TABE Reading M (or higher)
Access Curriculum:
Course Description: Covers all aspects of food safety – personal hygiene, cross-contamination and allergens, time and temp control, clean and sanitation. Utilizes ServSafe® Manager (6th edition no longer available; see ServSafe website for ServSafe Coursebook 7th Edition). Students summarize technical information in each chapter, practice the knowledge and take quizzes.
Duration: Approx. 40 hours of instruction; e.g., 9 weeks, 4-5 days/week, 1 hour/day; or 4 weeks, 4 days/week, 3 hours/day
Curriculum Description: Includes complete student handouts (activities and assessments), plus teacher guidelines and answer keys; organized by the ten textbook chapters.
Curriculum Pluses: Complete and very organized. Easy for instructor to use with little need for developing additional materials or activities.
Curriculum Drawbacks: Some course activities and materials unavailable to programs that do not use Schoology. Curriculum based on ServSafe Coursebook 6th edition, which is obsolete and no longer available for purchase. Learning materials may need to be modified to match current 7th edition Coursebook.
Notes:
- Original instructor used Schoology.com as online platform for some course activities and materials. A new instructor can create a Schoology account, then contact Heather Turngren to transfer files to his/her new course.
- An ABE instructor can teach this course without any food safety credentials; however, the instructor may choose to take the ServSafe® food safety exam to ensure his/her own mastery of the material. An additional step is to become a ServSafe® certified instructor and/or proctor. Only certified proctors can administer the exam.
